Encrypt api cryptography

Hello friends, I have a question regarding cryptography, I have some airtable apis keys in the app which I want to protect in case someone can download and analyze my apk file. I don’t know how cryptography really works in the backend, that is, my question is if they can analyze my apk and realize the data that I am encrypting, or is it much safer than that?
