I can’t find the document regarding sound sensor on Makeroid website. It shows “Page Not Found” when I click “learn more”. Where can I read about this component? Can I use the sensor to turn sound recorder or speech recognizer on?

Current is the documentation under development.
We all have much work on new things.
Btw hover the mouse above a block, then you will see a block description.
Same for the component in the components panel.
There is a help icon on every component.
